Lowlander Beer Stew Winter IPA


Mustard, a perfect mixture which you can add to a lot of dishes and snacks. That’s why it’s great to make it yourself in your own way, with a little bit of Lowlander I.P.A.

Lowlander I.P.A. Mustard

Side | Makes 1 jar

100 gr mustard seeds
75 ml vinegar (different vinegars can be used according to your taste)
125 ml Lowlander Winter IPA
Pepper and salt to taste

This is how you make it
1. Add mustard seeds, IPA, vinegar, salt and pepper in a glass bowl, stir until well combined.
2. Cover and allow to sit at room temperature for 8 to 12 hours (not really necessary but if you have time :)). 
3. Add to a small food processor or blender, process until mostly smooth but some whole seeds remain. Process longer for a more smooth mustard. 
4. Transfer to an airtight container, store in the fridge. The mustard will get better and better over time. 

Us true Lowlanders love a dollop of this spicy mustard on our cheese sandwich or with typical Amsterdam “ossenworst” but have also used it in Ottolenghi’s Beer Beef Stew to add even more I.P.A. character.
