Brewing the freshest beer ever we couldn’t ignore yuzu. Yuzu is a rare Japanese citrus of mysterious provenance with a fresh zing, grapefruit flavours and tones of mandarin orange. Asian cuisine loves yuzu and more and more Western countries are getting to know the distinctive flavour and aroma of the fruit, gradually giving it the appreciation it deserves.
Centuries ago, the yuzu was introduced in Japan by the Chinese. The yuzu did not appeal to theChinese and they brought the fruit to Japan. Although it originates from China, the yuzu now mainly grows in Japan. Funny thing is that the Japanese name is derived from the Chinese yòuzi / 柚子. But as yuzu was not popular in China people started to use the name yuzu for pomelo and grapefruit over time.
Yuzu juice is less sharp and much subtler than lemon, but strong and pungent at the same time; you only need a little to add a shot of yuzu flavour. Asian chefs use yuzu just like Western cuisine uses lemon. Yuzu has the ability to bring out flavours, which will add gorgeous complexity to any dish or drink.
Not surprisingly yuzu is a popular ingredient in cocktails too; it gives every concoction just the right kick!
